Fun fact: did you know that Barolo was always sweet in the 19th century? As Nebbiolo ripens late, it was often too cold in the cellar during fermentation and the yeasts were not sufficient to ferment the wine completely. Modern cellar technology has fundamentally changed this and today Barolo is one of the driest red wines.
