Amarone della Valpolicella is an Italian red wine speciality from the Veneto region. What makes it special is the use of grapes that are dried after the harvest. During this time (usually from October to January), the grapes lose 30-40% of their juice, which leads to an enormous concentration of sugar and extract in the grapes without any increase in acidity. After fermentation - during which the sugar is almost completely converted - the result is an incredibly dense, opulent, fruity, complex and dry wine that goes particularly well with braised game birds or a leg of lamb. Or simply enjoyed on its own, as a "meditation wine" so to speak.
