Ageing: From 100kg of grapes, only 70 litres of must are processed, only short maturation under flor, then in the solera system in 600 litre barrels
Oxidative ageing and the addition of a small amount of sweet must from Pedro Ximènez gives this sherry very intense aromas, with a fine scent of sultanas and a delicate nutty flavour, very full-bodied and long in the finish - the best of everything.
Aged, strong cheese is recommended
