Holzapfel Winery - Wachau

There are places on the map where everything is just right and you wish that time would stand still. Such a place is the Prandtauer Hof. When you enter through the gate into the inner courtyard and Barbara Holzapfel welcomes you, you feel as if you have arrived for a moment and time really does stand still. The endearing boss and her team provide unagitated, professional service, the whole place is an oasis of classic beauty, every little detail is perfect. The former reading yard of the St. Pölten canons is a 2-toque restaurant and, of course, the 3* winery run by Karl Holzapfel in the 2nd generation.

Karl Holzapfel cultivates the 14-hectare vineyard, which has such great sites as Kollmitz and Achleiten, without chichi but with a clear vision. The vineyards are only fertilised with natural greenery and micro-nutrients, and good ventilation thanks to careful foliage work reduces susceptibility to fungal diseases. His wines are all vinified dry (less than 1.2 g RZ), but have very different characters: whether light and lively Federspiel, full-bodied Smaragd or the sensational Hippolyt wines - the different vinification of the various vineyards creates a unique wine cosmos, despite the fact that only a few Grüner Veltliner, Riesling and Pinot Blanc grape varieties are cultivated. The Zweigelt Pink is a nice addition, but Karl knows what his vineyards stand for: White wine at its best.
