Vinification: 5000 year old technique: skin and juice ferment for 2 months in an 800 litre clay amphora, no pressing therefore less yield, further maturation without the skin for 8 months in clay amphora
Indescribably complex: exotic on the nose, tangy grapefruit on the palate with a noticeable saltiness, flint, expressive, very dry, gripping acidity
