Olive varieties: 20 hectares, 6,000 olive trees, perfectly divided between Biancolilla and Nocellara del Belice.

The "softer" Biancolilla with a light fruitiness and a hint of artichoke and green almonds (in Sicilian dialect "minnulicchia"), hints of aromatic herbs (often thyme and mint) complete the bouquet - Nocellara del Belice, a "stronger" variety with typical intense fruitiness, persistent bitterness and pungency, hints of tomato (green tomato leaf), freshly mown grass.

A perfect combination of elegance and vigour, a medium fruity oil, pleasantly spicy with a certain bitterness and pungency: harmony and balance for all meat dishes, vegetables, salads and soups. Excellent on pizza.
