Due to the different varieties of olives, this is a very elegant and delicate oil, characterised by notes of fresh grass, wild chicory and rosemary. The flavour is also mild, soft and balanced, with green notes of almonds, lettuce and fresh grass in particular.

Serve with vegetable dishes, fried fish and pulses
