Grape variety: 100% Chardonnay, dry, hand-picked, 30-year-old vines
Vinification: gentle pressing, 100% in 320 litre cigarillo barrels - 50% new, 50% second fermentation, complete BSA, 6 months battonage on the coarse lees
Expressive, long-lasting, complex, notes of camomile, baked apple, banana, pineapple, roasted almond, subtle woody flavour, slightly smoky, beautiful smoothness - must be aerated
Versatile food companion, great with veal
