Origin: Italy, South Tyrol, Kaltern, vineyard south-west of the lake, south-east facing at 260 metres above sea level
Producer: Kaltern Winery
Grape variety: 100% Cabernet Sauvignon, hand-picked, dry, 35-year-old vines
Soil: Moraine deposits, very well-drained alluvial sand
Vinification: Maximum concentration and yield reduction to around 35 hl/ha, the perfectly ripe grapes are harvested in crates and dried for 4 weeks in a cold room at around 8 °C. At the end of the drying period, the stems are completely lignified, the tannins in the skin are extremely soft and the sugar concentration is up to 260 g/litre. The grapes are pressed whole and vinified in open tonneaux (crushed twice a day) for around 4 weeks. It is then transferred to new barriques, where it matures for 20 months. The bottling was done without stabilisation or filtration.
Sensational combination of ripeness and concentration of the fruit with the tannin structure of Cabernet Sauvignon without being weighed down with unnecessary frills (residual sugar)
