Maturation: From natural raw must of Cabernet Sauvignon and Merlot, matured in small oak, chestnut and cherry barriques of 15 - 200 litres since 1994 using the solera method, not filtered

Only 1.6% of the grape yield remains after the long ageing period, extremely long-lasting, very complex due to the long ageing process, delicate sweetness with fruity notes, extremely intense flavour and unmistakable vinegar note

Ideal for refining flavourful dishes such as roasts and game, but also with risotto or soups
