Aceto di Vincotto - Vinegar made from cooked grape must
Origin: Italy, Apulia, Lizzanello (Lecce)
Producer: Gianni Calogiuri Vincotto 1825
Grape variety: Negroamaro and black Malvasia
Vinification: Drying of the grapes on the vine and on wooden trellises, gentle maceration for 24 hours until reduced to 1/5 of the original volume. Maturation for 3 years in oak barrels.
This vinegar is best suited for flavouring salad vinaigrettes and for marinating meat and fish.
Ingredients: Cooked grape must, vinegar.
No added sugar, colourings or preservatives.
