Vernatsch - or Schiava in Italian - is still the number one red wine grape in South Tyrol today, even though the total area under vines is declining. Until the 1990s, the high-yielding variety was predominantly used to make insignificant mass-produced wines, but winegrowers (co-operatives) are increasingly focusing on quality by selecting the best clones and reducing yields. Whether strong in St. Magdalener (often with the addition of a little Lagrein) or soft and supple as Kalterersee Auslese - the autochthonous grape variety impresses with its fine tannins, often a scent of violets and a little cherry and is the ideal accompaniment to white meat, snacks and all kinds of dumplings.
