Rivetto - Piedmont
We were lucky enough to meet Enrico Rivetto in person at his winery during one of our winemaker trips. Winemaking is an extremely complex subject in itself, especially when it comes to exceptional wines such as Barolo, but here it's always about the bigger picture. Here are a few insights into Enrico's work and his approaches:
- the soil is kept alive with specially produced compost, minerals, essences and propolis
- Rainwater is collected in a pond and the wastewater on the farm is also treated biologically and used for irrigation
- the friendly donkeys loosen the soil, nibble off excess herbs and produce valuable fertiliser
