If you can and want to learn something from a winemaker, we recommend a visit to I Capitani. A tour of the winery with Antonio is like a crash course in winemaking. Whether it's the soil profile (the Greco di Tufo grows on a unique soil which, due to the volcanic eruption 2000 years ago, hurled magma interspersed with gas up to here), leaf structure (the Fiano is the only variety with fluffy, velvety leaves which protect it from diseases), Pruning (not yet, we wait until after the full moon, which is better for the plant) or winemaking (battonage keeps the young wine fresh on the lees much longer than any sulphur application) - you rarely get so much concentrated knowledge, even if you have visited many wineries. His wines taste just as profound: the young Aglianico Guaglione has been one of my absolute wine classics for years, but tasting the differences in a barrel sample of three differently aged Aglianico is yet another dimension. We were impressed and are looking forward to the latest addition: Blanc de Noir from Aglianico - almost as fragrant as a raspberry biscuit roll.
